Recipes - Muffins

Banana Cran Bran Pecan Muffins with Dates Recipe


INGREDIENTS

1/2 cup brown sugar
1/4 cup molasses
1/4 cup cooking oil
2 eggs
1 cup milk
1 1/2 cups bran
1 cup sifted flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup chopped dates
1/2 cup chopped pecans
1/2 cup fresh or frozen cranberries
1 ripe banana, mashed
DIRECTIONS

Heat oven to 400 degrees F. Grease 12 muffin cups.

Combine sugar, oil, molasses, eggs and milk in large bowl and beat together well. Add bran and blend well.

Sift flour, baking powder, soda and salt together into small bowl. Add to wet ingredients. Stir just to blend.

Stir in dates, pecans, banana and cranberries at end of mixing.

Spoon into muffin cups.

Bake 15 minutes.
