INGREDIENTS
1/4 stick butter 1 1/3 cups sugar 2 eggs 1 tsp vanilla extract 2 cups all purpose flour 1 cup sour cream 1 cup mashed bananas 1/2 cup chopped pecans, optional 1 tsp baking powder 1 tsp soda 3/4 tsp salt Cream Cheese Frosting: 1 8 oz pkg cream cheese, Softened 1/4 cup melted butter 1 tsp vanilla extract 1 lb powdered sugar 1/2 cup chopped pecans, optional |

DIRECTIONS |

Cream butter and sugar until light and fluffy. Add eggs and vanilla then blend thoroughly. Combine flour, baking powder, soda and salt then add to creamed mixture alternately with sour cream, beginning and ending with dry ingredients. Add bananas and pecans, mixing just until blended. Spoon batter into a greased and floured 13 X 9 pan and bake at 350 degrees for 40-45 minutes. Cool and frost with Cream Cheese Frosting. If baking in two 9 inch pans, bake at 350 degrees for 35 minutes. Frosting: Combine all ingredients and blend well. One half cup of chopped pecans can be added. Frost cooled cake.
Notes: Ive been making this cake for the last 29 years, it is absolutely the best. The longer it sits, the better it gets. I usually hide some just to let it set over night.
